Festive Friands

Its one week to go before Christmas and so I thought I’d give you all a little Lemony present!

No, it’s not talc or a pair of comedy slippers but this fantastically tasty and stupidly easy alternative to mince pies. I’ve fallen back on my old favourite – the friand – to create a moist zesty little cake with a fruity mincemeat centre, that’s ready in under an hour.

What the heckins! Its worth making these just for the festive fug that will fill your home.

Festive Friands

5 large egg whites
200g icing sugar, sifted
175g butter melted
140g almond meal
75g plain flour, sifted
zest of 1 orange
mincemeat – I used Waitrose’ Cranberry Mincemeat

You will need a 12 hole friand tin, lightly greased.

Preheat oven to 180C/ 160C fan

Whisk egg whites lightly until amalgamated.
Mix in icing sugar, butter, almond meal and orange zest. Sift in flour and fold in lightly.
Use about 90% of your batter to fill the friand pan. spoon in a teaspoon of mincemeat and top with a scant amount of batter ( enough to just coat the filling ).

Place in the centre of the preheated oven and bake for 20-25 mins. Leave the tin to cool for a few minute then turn out – do not leave in the tin until completely cold as this can make it difficult for the friands to pop out smoothly.
