Peanut Butter & Choc Chip Banana Loaf

I am now on official maternity leave countdown….it’s not too long until I say cheerio to work for around 8 months or so ( as long as the savings hold out basically ). This is simultaneously both exciting and terrifying, While I’m looking forward to meeting ‘Bob’, its quite overwhelming to think that we are about to be parents. I’ve been thinking a lot about the traits that we both have and which ones we hope ‘Bob’ will inherit and the ones which we hope will pass her by. The list looks something like this:

1) Mr L’s co-ordination, ie, he has some, I am completely un-co. Apart from dancing, he can’t bogle for toffee.

2) Mr L’s whistling , ie, he can. I can only whistle one note even though in my head I’m following a tune.

3) Mr L’s height. We think she already has this as the sonographer made note of her super long legs.

4) Mr L’s tidiness. I think my un-coordintation goes hand in hand with my untidiness. I mostly blame this on being ‘creative’.

5) Mr.L’s memory. Mine is completely useless. We often sit through a film that I swear blind I’ve not seen ( all the while Mr Love insisting I have ) until the last 5 minutes when I suddenly say ‘Oh yes…Ive seen this”. Cue cushion to the head from Mr L.

Errr, I’m noticing a trend here….are you?

Moving swiftly on, here is the dirtied up banana loaf I promised you!

Ok, so I may have a slight addiction Reece’s Pieces and feel the need to throw them into most bakes at the moment. Is this really such a bad thing?  My post holiday hips say yes but my taste buds say ‘Hell no!”

This cake is really easy to make – you just throw everything into a mixer and, well, mix!

Peanut Butter & Choc Chip Banana Loaf
2 super-ripe bananas, mashed
170g caster sugar
170g self raising flour
170g butter, unsalted and softened
3 large eggs
1 teaspoon vanilla extract

2 packets Reece’s Pieces Peanut Butter Cups – 6 cups in all, chopped into chunks

Preheat oven to 160C.

Grease and line a loaf tin.

Pop all the ingredients except the Reece’s Pieces into a mixer of food processor and blend until just mixed. Stir in the peanut butter cup chunks and then pour into your lined loaf tin.

Place in to centre of the preheated oven for 50-60mins. Place a piece of foil on top if it begins to brown too much.
