Apple Sauce Wholemeal Pancakes

So, this is what 9 days overdue feels like. I can sum it up in one word – Oooooof.

I feel as big as a house and I move at a glacial pace ( It’s always SO nice when people great you with “Oh, you’re huge!” ). I have one pair of shoes that fit on my swollen hooves and they are about as stylish as a pair of old ladies slippers. Most of my day is spent fielding texts and calls asking if I’ve had the baby yet – “Oh yeah, I’ve had the baby but I just forgot to tell you’!!

Ooooo that feels better – sometimes we all just need a good rant. Thanks for listening – how about a tasty recipe in return?

I’ve been trying ( and mostly failing – damn you, tasty cake! ) to eat a healthy balanced diet and as such I thought I’d try to make a healthy version of one of my favourite breakfast treats, the fluffy american style pancake.

Here I’ve used wholemeal flour and apple sauce for a sweet and nutty flavour. Mr Love and I then proceeded to pimp them up with lashings of maple syrup. Delicious!

Apple Sauce Wholemeal Pancakes  Recipe adapted from here

170g wholemeal flour
1 teaspoon baking powder
30g butter, melted
260g apple sauce
200ml milk
1 egg
1 teaspoon vanilla extract

Sift the flour and baking powder together. Make a well in the centre and add the rest of the ingredient. Mix until you have a smooth batter.

Melt a knob of butter in a frying pan and dollop a large spoonful of batter into the centre. When the top of the pancake has lots of bubbles on top and looks almost cooked through, flip over.

Serve with syrup, yogurt and fruit as desired.
