Sometimes Mr Love has some great ideas…such as “Will you marry me?” or “Lets have a baby”. Unfortunately, some other notions haven’t panned out quite so well. To be fair most of these have involved dodgy facial hair – even the mention of ‘lamb chop whiskers’ gives me a stress twitch.

Whilst munching on a slice of my Lamington Victoria Sponge, my beloved came up with one of his best ideas to date. ” What about a Lamington Friand ? ” he said with a mouthful of chocolatey coconut sponge.

Not entirely convinced, I whipped up a batch the next day and what do you know? They were flipping’ fabulous. Best friand recipe yet. Nice one Mr L. (This still doesn’t mean you’re allowed to shave your beard off).

Lamington Friands

5 Large Egg Whites
185g Butter, Melted
125g Ground Almonds
220g Icing Sugar
75g Plain Flour
1 tsp vanilla extract

Good quality raspberry jam

100g dark chocolate, 70% cocoa, melted
A good handful of desiccated coconut sprinkled onto a plate

Preheat oven to 180 C.

Grease and flour a 12 hole friand tin – dont skimp on this bit as they will be a bugger to get out of the tin. You can, of course, use a muffin tin if you can’t be arsed to buy a friend tine ( I have a hall cupboard filled with baking paraphernalia – I may need an intervention before I’m featured on that show ‘Horders’ ).

Whisk the egg whites in bowl until amalgamated and lightly frothed.

Add the melted butter, ground almonds, sifted icing sugar and vanilla. Then stir in flour as lightly as possible.

Spoon into your tin and place in the centre of the preheated oven for 20 – 25 mins.

They are done when they are lightly golden on top and are springy to the touch.

Leave to cool slightly before popping out of the tin. Place on a wire rack to cool completely.

Slice each cake in half and sandwich back together with a good slick of raspberry jam. Dip the top of the friand into your melted chocolate and then into the desiccated coconut. Place in the fridge to set the chocolate.

Serve at room temperature.
