Whats that? Do I have physic powers that enable me to see my lovely readers…. Nope, unfortunately not, but who doesn’t love a gorgeous compliment every now and then? Plus if you’ve been drawn to my tiny corner of the interweb then you surely must have excellent taste and are a thoroughly lovely person. So, here is a sunny friand recipe just for you!

In my last post I promised coconut and here it is, muddled with some tangy lime all wrapped up in a gloriously moist little cake.

I’ve had a recent comment regarding where to buy Friand tins ( I bought mine in Australia where Friands are super popular ) so  I have donned my deerstalker and done some sleuthing on your behalf ( I typed Friand Tin into Google ) and found them on Amazon and Lakeland websites. I hope this helps!

Coconut & Lime Friands

5 Large Egg Whites
185g Butter, Melted
125g FINE desiccated coconut
220g Icing Sugar
75g Plain Flour
zest and juice of 2 small limes
a handful of large coconut flakes to decorate

Preheat oven to 180 C.

Grease and flour a 12 hole friand tin – don’t skimp on this bit as they will be a bugger to get out of the tin. You can, of course, use a regular muffin tin.

Whisk the egg whites in bowl until amalgamated and lightly frothed.

Add the melted butter, fine desiccated coconut, sifted icing sugar, lime zest and juice. Then stir in flour as lightly as possible.

Spoon into your tin and sprinkle the tops with large coconut flakes. Place in the centre of the preheated oven for 20 – 25 mins.

You may need to cover with some foil if the coconut flakes start to get too brown.

Leave to cool slightly before popping out of the tin. Place on a wire rack to cool completely.
