How to brighten up a miserable ( seriously! this is August FFS ) British morning? With cake of course! preferably dipped in eggy mix and fried. Then slather in maple syrup and adorn with yogurt and berries at your leisure.

I always used to hate mornings. I’d shoehorn myself out of bed as late as possible, bolt down some toast and scuttle off to work.

Now, mornings are my favourite part of the day. It is the only time Mr. Love, Little Love and I all sit down to eat together. Now, this is precious, carved out time for family fun and feasting. I try, when time allows, to make something yummy that sets us all up for our busy day of designing bags ( me ) designing furniture ( Mr L ) and scooting/ dancing and  splashing in puddles ( Little L ).

I first tried this Banana Bread French Toast as part of the western breakfast buffet at a hotel in India on my last work trip. It bolstered me up for a full day of visiting factories, showrooms and dodgy loo’s.

This isn’t a recipe really, its just an easy and fabulous way of using up any leftover banana bread that you have lurking about the place. Ha!…. WHO HAS CAKE LEFT LURKING AROUND!! I totally made this loaf so that I could use it for french toast.

Heres what you do:

Slice your “leftover” Banana Loaf into thick slices – I used my MIL recipe.

BANANA BREAD 3

Whisk up some eggs and milk with a splosh of maple syrup and a dash of cinnamon.

Soak your cake slices in the eggy mix and fry until golden.

Pour liberally with maple syrup and ENJOY!
