Blueberry Blondies


As you can see from my ‘picture’ on the blog I am a blonde… not a completely natural one but I do seem to possess quite a lot of the typical blonde personality traits.

The other day at work I was taking pictures of samples with my phone when I said to my colleague ” Wouldn’t it be great if there was some kind of device that only took pictures so I wouldn’t have to use my phone all the time!”. To which she replied ” Errr, do you mean a camera?!”

Well, exactly.

Believe it or not, I do hold down a demanding job, have a mortgage and am a Mother. I’m not quite as ‘Blonde” as Jessica – “What part of the buffalo do buffalo wings come from?” – Simpson but I have my moments. As a very wise fair-haired woman once said ‘The best part of being blonde is forgivable momentary lapses of common sense”.

I got thinking about all this because I made Blondies! OK, so they might not have quite the depth of they’re Brownie sisters but they’re zesty, sweet and ultimately a lot more fun!

These Blondies are studded with jammy blueberries, packed with hunks of white chocolate and have an extra squodge element thanks to the ground almonds. The lemon zest stops all this getting too cloyingly sweet so its pretty easy to hoover up several slabs in one go….

As you can see Little Love certainly enjoyed them!

Blueberry Blondies

125g unsalted Butter
200g Good Quality White Chocolate, Chopped
110g Natural Caster Sugar
2 Large Eggs
130g Plain Flour
120g Blueberries
100g Ground Almonds
Zest of 1 Lemon

Line a 9″ square tin with baking paper.
Preheat oven to 170C.

On a low heat melt the butter and 100g of the white chocolate, leave to cool.
Beat together the eggs and sugar until they are golden & thick, mix in the lemon zest.
Sieve in the flour, add the butter mixture and fold to combine.
Gently stir in the blueberries, remaining white chocolate and ground almonds.
Pour the batter into the prepared tin and bake for 25 mins until golden.

Leave to cool then remove from tin and cut into 16 pieces.

  1. Ooohhh these look so delish. I could do with some right now – even though it’s only 9am. It’s never too early for chocolate anything!

    • Ha! Exactly. I made a second batch of these to take to work and scoffed a piece as I was cutting it into slabs at 7am!
