Chocolate & Pistachio Friands

So, I’m thinking of writing a book called 50 Fabulous Friands. What do you think? would you buy it?!

Friands really are fabulous after all. Seriously, move over cupcakes, get out of the way whoopie pies, there’s a new petite cake in baking town! They are ridiculously easy and ALWAYS turn out well.

I whipped these up last night as I had some egg whites left over from a wild evening of making passionfruit curd. I wasn’t even planning to blog about these ( they were just for Mr L to take into work – let me know how they go down peeps! ) but they turned out so deliciously fudgy and chocolatey that I had to share them with you.


5 large egg whites

185g butter, melted

1oog whole, shelled pistachios, finely ground

220g icing sugar

50g plain flour

25g good quality cocoa powder

Optional Extra:

40 g whole, shelled pistachios, roughly chopped

40g dark chocolate

Preheat oven to 180C / 160C fan forced.

Lightly grease a 12 hole friand tin. I have found the best way of doing this is to use a little melted butter and a pastry brush. This method is especially good if your friand pan has a motif on the bottom as mine does, the brush can easily get in any nooks and crannies.

Whisk the egg whites in bowl until amalgamated and lightly frothed.

Stir in the melted butter, ground pistachios and sifted icing sugar. Then sift in the flour and cocoa powder and mix in gently.

Sprinkle the tops with chopped pistachios and chocolate ( I only did this as I had a bit of chocolate knocking about and some nuts left over – these cakes would be just a delicious unadorned ).

Spoon into pan holes and place tin in the centre of the preheated oven for 20 – 25 mins.

I cannot urge you enough to bake these or any friand flavour, they take 5 mins to make and then 25 mins to cook. Bam! in 1/2 an hour you’ve got dinky little bits of heaven that are chic and crazy tasty! Go to it!
