Ka-pow! Breakfast Loaf


Is it a bird? Is it a plane? No, it’s a Super Food!

Not a week goes by without a new grain or berry being touted as the key to eternal youth and vitality. Usually they can only be harvested from a vertical Himalayan rock face, just past the turn off to Shangri La. To be honest, I just like the image of a blueberry or pomegranate wearing a little red cape and yellow Y fronts, ready to fight aging and dwindling sex drives.

How about a lovely loaf that makes it easy to have your share of ‘super’ berries and the ever faithful energy giving properties of oats? Sounds good? Well, Wonder Lemony to the recipe rescue! Also it’s almost fat free, sweet.

I love to eat this loaf sliced, toasted and topped with yogurt and fresh berries, it makes me feel as though I’m having a decadent pudding for breakfast and it keeps me feeling tip top ’till lunch. Mr Love likes his toasted with a slick of butter, he’s a paired down and classic kind of guy after all.

50g rolled oats
300ml skim milk
1 teaspoon vanilla extract
125g dried super fruit mix ( blueberry, pomegranate, cherries )
50g dried apple, chopped
75g soft brown sugar
1 teaspoon cinnamon
3 tablespoons honey
1 egg
240g self raising flour
1 teaspoon baking powder
50g macadamia nuts, roughly chopped.


Soak oats in milk and vanilla extract for at least 30 mins.

Preheat oven to 180C/160c fan forced. Grease and line a 2lb loaf tin.

Pour the oaty milk mixture into a large bowl. Stir in the egg, sugar, honey, fruit, cinnamon, sifted flour, baking powder and chopped nuts. Easy, right?

Scrape and coax into your tin and place in the centre of your oven for 45mins until the crust has turned a deep golden hue. A skewer insert into the middle of the loaf should come away clean.

Leave to cool completely before removing from tin. Slice and eat as is, or toast and top as you wish for a ‘super’ start to your day.
