Rosemary Friands

After a hard week at the fashion grindstone here I am relaxing in my kitchen, cuppa in hand after baking some Rosemary Friands.

Don’t you just love to crush rosemary between your fingertips and inhale its deliciously cleansing scent?

I have often made Nigella’s Rosemary Cake and at present I am friand crazy ( so much easier than cupcakes and always super moist ), so it occurred to me that this could be a match made in baking heaven.

The end results? The flat is filled with a sweet herby fragrance and Mr Love has snaffled one of the dinky little cakes already!

Here’s how its done:

Ingredients:

5 Large Egg Whites

185g Butter, Melted

125g Ground Almonds

225g Icing Sugar

75g Plain Flour

1 good Tablespoon Chopped Rosemary ( small pieces but not too fine )

Preheat oven to 180 C.

Lightly grease a 12 hole friand tin – if you don’t have one you could bake in a cupcake tin instead.

Whisk the egg whites in bowl until amalgamated and lightly frothed. Don’t chuck the old folks, sorry, egg yolks. Keep them for custard tarts or egg rich sponges.

Add the melted butter, ground almonds, sifted icing sugar and rosemary. Then stir in flour as lightly as possible.

Spoon into your tin and place in the centre of the preheated oven for 20 – 25 mins.

Enjoy the fabulous aroma as these little babies cook.

They are done when they are lightly golden on top and are springy to the touch.

Ta da! I adore seeing them pop out of their tin, proud petaled bottom greeting me, in all their regimented glory.

Sieve a little icing sugar over the friands and pile them up high on a pretty plate before serving to the lucky recipient.
